One of the best ways I know how to show love is to bake for others. I believe homemade cake is love and sharing something that I have made with my own hands is my way of expressing it. This fluffy black walnut spice cake is packed with zucchini and layered with a fluffy cinnamon cream cheese frosting that has been generously laced with fig jam. The black walnut adds a bold, distinctive flavor and the honey adds just the right amount of sweetness. For this cake, you MUST LOVE FIGS.

Black Walnut Zucchini Cake + Fig Jam Swirled Cinnamon Cream Cheese Frosting + Honeyed Figs

Ingredients

Black walnut zucchini cake:

  • 3 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp Himalayan sea salt
  • 4 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 cup raw honey `
  • 1 cup unsweetened applesauce
  • 2/3 cup coconut oil melted
  • 2 eggs large
  • 3 tsp vanilla bean paste
  • 2-1/2 cup grated zucchini about 3 small
  • 1 cup black walnuts chopped

Fig jam swirled cinnamon cream cheese frosting: 

  • 16 oz cream cheese softened
  • 9 oz coconut whipped topping
  • 3 tsp vanilla bean paste
  • 1/4 cup pure maple syrup
  • 1 tsp cinnamon
  • 1 fig chopped
  • 3 tbsp fig jam storebought or homemade

Honeyed figs: 

  • 4 fresh figs halved and quartered
  • 2 tbsp honey drizzled

Instructions

  • 3 layer, 8-inch cake
    Preheat Oven to 350 degrees.
    Grease 3 cake pans with nonstick coconut oil.

Black walnut zucchini cake:

  • In a mixing bowl, add wheat flour, baking powder, baking soda, sea salt, ground cinnamon, and ground nutmeg. Whisk together.
    In a large bowl, add honey, unsweetened applesauce, coconut oil, eggs, and vanilla bean paste. Whisk together until smooth.
    Add the dry ingredients to the wet ingredients until everything is combined. Gently fold in the zucchini and black walnuts.
    Divide the batter among the three cake pans. 
    Bake for 30-35 minutes, depending on your oven.
    Let cool completely once out of the oven. I like to use a serrated knife to level the cakes if needed.

Fig jam swirled cinnamon cream cheese frosting: 

  • Add cream cheese, coconut whipped cream, vanilla bean paste, cinnamon, maple syrup and the chopped fig to a small bowl. 
    Blend until smooth using a mixer. 
    Very carefully spread the frosting on the zucchini cake, layer by layer, once cooled. Swirl the fig jam on top of the frosting layers with a small knife or toothpick.

Honeyed figs:  

  • Drizzle the figs with honey. You can roast them as well but they tend to get mushy for decorating. 
    Decorate the cake with extra black walnuts, honeyed figs, and any other decorations that you love!

Notes

Black Walnuts are richer, bolder, and have a much more distinctive flavor than English Walnuts.  They also contain the highest protein content of any tree nut.
I have purchased mine on Amazon and at Whole Foods. They are great to eat by themselves as well!
