Wild Blueberry + Dark Chocolate Granola

I rotate between this version and a tart cherry+chocolate chunk granola, both for Andrew and my family. They absolutely obsess over it! For me, I mix in dried honeycrisp apple chips or just chocolate chips. Since I began making this, we have not had any store bought granola in our home! It’s so so good, extra crunchy, super simple and extremely healthy!

Wild Blueberry and Dark Chocolate Granola

Wild Blueberry + Dark Chocolate Chunk Granola/ Honey Crisp Apple Chip Granola

Ingredients

Granola Base: 

  • 2 cups old fashioned oats
  • 1/2 cups oat flour or whole wheat flour
  • 2 tbsp flaxseeds
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 4 tsp cinnamon
  • 1 tsp Himalayan sea salt
  • 1/2 cup toasted almonds
  • 1 cup chopped walnuts
  • 1/2 cup coconut flakes or shavings unsweetened
  • 1/2 cup coconut oil
  • 1/3 cup honey or maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup wild dried blueberries or honeycrisp apple chips Trader Joe's brand for both
  • 1/2 cup dark chocolate chunks

Instructions

  • Heat oven to 300 degrees
    Mix it all up and spread evenly on a parchment paper lined cookie sheet. Bake for 20 minutes then toss and bake for another 20 minutes. 
    Let cool completely.
    Add in dried blueberries and dark chocolate chunks or honeycrisp apple chips.
    Top with milk of choice (I always use oat milk), yogurt and fresh fruit!
    Other add ins: 
    white chocolate chips, dried cherries, banana chips, cashews or anything else you love!

Notes

You can also sub butter for the coconut oil for a richer, more traditional granola. 
Use maple syrup instead of honey to make it vegan!

    So delicious! I made the gluten free version with organic gluten free oat flour and gluten free organic oats. I mixed in dark chocolate and tart cherries. Obsessed. Added bonus is how amazing my house smells! This will definitely be a new staple in my kitchen, thanks for sharing this recipe!

    I used almond flour instead of oat/whole wheat and it was delicious. I was also sadly missing hemp seeds so I doubled the chia. A big hit in my house! 🙂
