Preheat the oven to 425 degreesGrease a 6 count jumbo muffin tin (or 12 count regular muffin tin) with coconut oil spray
Healthy Whole Wheat Black Cherry Muffins:
Sift the whole wheat flour, oats, baking powder, cinnamon, Maldon salt and coconut sugar.Whisk the applesauce, vanilla Greek yogurt, coconut oil, egg whites, vanilla extract, almond extract, and almond milk. Sift the dry ingredients into the wet ingredients until combined. Do not over stir. Fold in the cherries and gently spoon the batter into the greased muffin tins. They should be about 3/4 full.
Cinnamon Almond Superfood Brittle:
Combine all the ingredients together in a small bowl. Sprinkle 1 tbsp of the brittle mixture on top of each muffin. Bake for 5 minutes at 425 degrees and then turn the oven to 350 degrees. Bake for another 20-25 minutes depending on your oven.

These muffins taste best right out of the oven! Drizzle with almond butter or honey if you desire a sweeter muffin.
