These are the healthiest, nutrient packed muffs you will find! They're juicy, tart and fluffy...packed with fresh cherries and a hint of almond extract. Topped with a crunchy superfood brittle made of toasted almonds, chia seeds, flax seeds, hemp hearts and coconut oil. Andrew isn't a sweets guy and he can't get enough of these healthy treats.

Healthy Whole Wheat Black Cherry Muffins + Cinnamon Almond Superfood Brittle

Ingredients

Healthy Whole Wheat Black Cherry Muffins:

  • 1-3/4 cups whole wheat flour
  • 3/4 cup organic oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp Maldon salt
  • 3/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 3/4 cup vanilla Greek yogurt
  • 2 egg whites
  • 1 tsp vanilla extract organic
  • 1 tsp almond extract organic
  • 1/4 cup coconut oil
  • 1/4 cup almond milk
  • 1 cup fresh cherries pitted

Cinnamon Almond Superfood Brittle:

  • 1/2 cup toasted almonds slivered
  • 1 tsp chia seeds
  • 1 tbsp flax seeds
  • 1 tsp hemp hearts
  • 1 tsp cinnamon
  • 1 tbsp coconut sugar
  • 2 tbsp coconut oil

Instructions

  • Preheat the oven to 425 degrees
    Grease a 6 count jumbo muffin tin (or 12 count regular muffin tin) with coconut oil spray

Healthy Whole Wheat Black Cherry Muffins:

  • Sift the whole wheat flour, oats, baking powder, cinnamon, Maldon salt and coconut sugar.
    Whisk the applesauce, vanilla Greek yogurt, coconut oil, egg whites, vanilla extract, almond extract, and almond milk.
    Sift the dry ingredients into the wet ingredients until combined. Do not over stir. Fold in the cherries and gently spoon the batter into the greased muffin tins. They should be about 3/4 full.

 Cinnamon Almond Superfood Brittle:

  • Combine all the ingredients together in a small bowl.
    Sprinkle 1 tbsp of the brittle mixture on top of each muffin.
    Bake for 5 minutes at 425 degrees and then turn the oven to 350 degrees.
    Bake for another 20-25 minutes depending on your oven.

Notes

These muffins taste best right out of the oven! Drizzle with almond butter or honey if you desire a sweeter muffin.
