Fall Harvest Maple Apple Granola + Toasted Pumpkin Seeds

Whipping up all things fall right now! We are addicted to this granola...it is so simple yet crunchy and full of all the fall flavors. It's healthy and protein and nutrient packed. Finish with a drizzle of maple syrup and it is the perfect crisp fall morning treat.

Autumn Harvest Maple Apple Granola + Toasted Pumpkin Seeds

Ingredients

Apple Spice Granola + Toasted Pumpkin Seeds:

  • 2 cups old fashioned oats
  • 1/2 cup oat flour
  • 2 tbsp flax seeds
  • 1 tbsp chia seeds
  • 1 tbsp hemp hearts
  • 4 tsp cinnamon
  • 1 tsp pumpkin pie spice Trader Joe's
  • 1 tsp Maldon salt
  • 1/2 cup toasted slivered almonds
  • 3/4 cup coconut oil
  • 1/3 cup maple syrup or honey
  • 2 tsp vanilla extract
  • 1 cup honeycrisp apple chips organic

Instructions

  • Heat oven to 350 degrees
    Mix it all up and spread evenly on a parchment paper lined cookie sheet. Bake for 15 minutes then toss and bake for another 15 minutes. 
    Let cool completely. Add in the honeycrisp apple chips. Drizzle with maple syrup and milk of choice (I always use oat milk), or sprinkle on yogurt.

Notes

I like to use Trader Joe’s pumpkin pie spice as it has lemon in it. But any brand works!
