Golden Milk Latte Cupcakes + Dusty Rose Clover Honey Buttercream
Ingredients
Golden Milk Latte:
- 1 cup coconut milk
- 1 tbsp honey or maple syrup
- 1/4 tsp ground turmeric organic
- 1/4 tsp ground ginger organic
- 1/4 tsp ground cinnamon organic
- 1/4 tsp pure vanilla extract
- pinch of nutmeg
- pinch of black pepper
Golden Milk Latte Cupcakes:
- 1 cup homemade golden milk
- 1 cup vegan oat milk butter room temperature
- 1/2 cup coconut sugar
- 1/2 cup brown sugar
- 1 tbsp vanilla bean paste
- 3 large brown eggs organic
- 1/2 cup coconut yogurt or oat milk yogurt
- 2-1/2 cups oat flour
- 2 tsp baking power
- 1/4 tsp baking soda
- 1/2 tsp Himalayan sea salt
Dusty Rose Clover Honey Buttercream:
- 1 cup Myokos oat milk butter
- 1/2 cup Clover honey or maple syrup
- 2 tsp vanilla bean paste
- 1 drop dusty rose soft gel paste food coloring AmeriColor brand
Instructions
Golden Milk Latte:
- Whisk the coconut milk, honey, turmeric, ginger, cinnamon, nutmeg and black pepper in a small saucepan over low heat. Bring to a low simmer for 15 minutes, stirring occasionally. Remove from heat. Stir in the vanilla extract. Use a frother if desired. Set aside.
Golden Milk Latte Cupcakes:
- Preheat oven to 350 degrees.Line 12 jumbo cupcake molds with paper liners (or 24 regular size).Beat the oat butter and sugars together in a large bowl until fluffy, about 1 minute. Add the vanilla bean paste and coconut yogurt and continue to beat until smooth. Add each egg and beat until incorporated. Sift in the oat flour, baking powder, baking soda, and Himalayan sea salt. Gently pour in the golden milk, beating until combined. Do not overmix.Divide the batter evenly into the cupcake liners. Bake for 25-30 minutes, or until the tops have a light golden color and are just set. Let cool.
Dusty Rose Clover Honey Buttercream:
- Add the oat butter, Clover honey and vanilla bean paste to the bowl of standing mixer and beat on low speed. Once incorporated, increase speed and whip until creamed. It should have lighter white color, about 2 minutes. Add a small drop of the dusty rose gel and continue to mix. Start conservatively and add more to develop the color you desire. Frost the cupcakes with the Clover honey buttercream and decorate with wildflowers or dried rose petals!
Notes
To make this recipe fully vegan, substitute maple syrup for the Clover honey and use 3 flax eggs: ( 3 tablespoons of ground flaxseed meal with nine tablespoons of water. Mix together, and let set in your refrigerate for 15 minutes).
